  1. Ingredients

    2 pounds of canned kidney beans or your favorite beans. I used great northern.

    1 small onion, minced

    1 small green pepper sliced super thin

    handful of fres parsely chopped

    1/4 cup each of red wine vinegar and canola oil

    1/2 cup sugar ( I used splenda)

    salt and pepper to taste

    Steps

    Mix vinegar, oil, sugar and salt and pepper and combine it with the beans and veggies. Cover, refrigerate for several hours and enjoy !!

  2. Description

    Great with the Orange Ginger shrimp

    Ingredients

    6 Tbsps. butter

    1 large red onion, chopped

    1 large red bell pepper, chopped

    1 large yellow bell pepper, chopped

    2 1/3 cups long-grain white rice

    2 tsps. cumin

    1 tsp. chili powder

    3 3/4 cups chicken broth

    1/2 cup fresh basil, chopped

    2 garlic cloves

    Steps

    Melt butter in a heavy large pot over medium heat. Add onion and bell peppers along with garlic and saute until tender. about 12 minutes. Add rice, cumin and chili powder stir 1 minute. Add broth and bring to a boil, stirring occasionally. Cover pot. Reduce heat to medium-low and simmer until rice is tender and broth is absobed, about 25 minutes. Season pilaf with salt and pepper to taste........Sprinkle with basil and serve.............Yummy

  3. Description

    A fast very tasty light supper

    Ingredients

    1/4 cup fresh orange juice

    2Tbs. frozen orange juice concentrate

    1 Tbsp. orange zest

    1 tsp. fresh minced ginger

    1 Tbsp. fresh chopped mint

    Steps

    Soak 4 wooden skewers in water for 30 minutes.

    Marinate 24 peeled,de-veined shrimp in mixture of all ingredients for at least one hour preferably more.

    Arrange 6 shrimp on each skewer

    Grill over medium heat for two minutes on one side basting with left over marinade. Turn over and grill for an additional two minutes on other side.

    Serve over a rice pilaf !!!! Enjoy

    This is a very light meringue drop from Sandra Lee of Semi Homemade

    Ingredients

    3 egg whites, at room temperature

    1/4 teaspoon cream of tartar

    3/4 cup sugar or Splenda (that is what I used)

    1 teaspoon imitation strawberry extract

    3 drops red food coloring

    Special Equipment:

    Pastry bag

    #4 star tip

    Steps

    Preheat oven to 200 degrees F.

    Line 2 heavy large baking sheets with parchment paper. Beat egg whites in clean large metal bowl on medium speed until foamy. Add cream of tartar. Increase speed to high and continue beating until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until siff peaks form, about 5 minutes. Quickly mix in *strawberry extract. Stir in food coloring, 1 drop at a time, until desired color is achieved.

    Spoon meringue into pastry bag fitted with star tip. Pipe 12 (1 1/2-inch high by 1 1/2 -inch in diameter) mounds onto each prepared baking sheet, spacing evenly apart. Bake for 3 hours, or until dry and crisp. Cool meringues completely on baking sheets. Store in an airtight container at room temperature.

    *I did not have strawberry extract so I took about seven strawberries and forced them through a colander and used that juice and they were awesome.

    If you read the ingredients and use the Splenda you can really eat these to your hearts content.

  6. Description

    This is a low cal, very easy quick fix dinner.

    Ingredients

    1 Tab. butter

    3 large onions

    1 cup white wine

    4 cups beef broth

    slices of whole wheat bread

    slices of provolone cheese(preferably round slices)

    S&P to

    Steps

    Saute onions in butter till transparent. add one cup of wine till the wine has reduced. Add the beef broth and S&P

    Take the slices of whole wheat bread and cut out circles with the bottom of a glass. Brush both sides with a little butter and toast in oven till crispy.

    Place the circles of bread on the soup which you have ladled in crocks and put the provolone cheese on top and broil till bubbly and brown. Enjoy !!

  7. Ingredients

    1 tsp. olive oil

    1/4 dry sherry or apple juice (I use the apple juice)

    1/2 medium onion (diced)

    2 cloves of garlic (diced)

    1/2 cup bell pepper (diced your choice of color)

    4 cups diced tomatoes 3- 16 0z. cans

    1 cup vegetable broth

    1/3 cup orzo macaroni

    1/4 fresh basil

    Steps

    In a soup pot heat oil and apple juice over med. heat. Saute onion,garlic and bell pepper 8 to 10 mins until onion is soft but not brown. Add tomatoes & broth bringing to a boil. Add the basil and simmer for about 20 minutes.

    Put 3/4 of the soup in the food processer and blend till smooth.

    Add it back to the pot.

    Cook the orzo until al dente and then add to the soup.

    Serve with crusty garlic bread and some grated parmesan. ENJOY !!

  8. Ingredients

    1 Tbls. vegetable oil

    1 onion chopped

    3 cloves garlic crushed

    1(4 ounce) can chopped green chile peppers

    2 tsps. cumin

    1 tsp. oregano

    1 tsp. cayenne pepper

    2 (14.5. ounce ) chicken broth

    3 cups chopped chicken ( you can use leftover chicken for this recipe or you can buy White breast chicken in a can)

    3 (15 ounce) can white beans

    1 cup shredded monterey jack cheese

    Steps

    Heat the oil in a large saucepan over medium low heat. Slowly cook and stir the onion till transparent. Mix in the garlic, jalapeno, green chile peppers,cumin oregano and cayenne. Continue to cook and stir until tender about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally. Remove the mixture from the heat. Slowly stir in the cheese until melted.

    Serve with some crusty bread and enjoy !!

    This is a fast dinner for a cold night.

    Description

    I have changed this recipe around a little and it is awesome. It is a great meal if you are watching your weight.If you don't like it spicy you can replace mild green chiles for the jalapenos.

  9. Ingredients

    4 tbls. butter, melted

    1 1/2 lbs. bay scallops rinsed and drained

    1/2 cup seasoned bread crumbs

    1 tsp. onion powder

    1 tsp. garlic powder

    1/2 tsp. paprika

    1/2 tsp. dried parsley

    3 cloves garlic, minced

    1/4 cup grated parmesan cheese

    Steps

    Prehet oven to 400 degrees

    Pour melted butter into a 2 quart oval casserole dish.

    Distribute butter and scallops evenly inside the dish.

    Combine the bread crumbs, onion powder, garlic pwder paprika, parsley, minced garlic and parmesan cheese.

    Sprinkle this mixture over the scallops.

    Bake in pre-heted oven till scallops are firm and golden about 20 minutes.

    This is almost like a scampi with scallops

  10. Ingredients

    2 lb. Ricotta

    1 1/3 cup splenda

    1/3 cup flour

    5 lg. egg yolks

    5 lg. egg whites

    1/3 cup heavy cream

    1 lemon rind.grated

    1 tsp. vanilla

    1/2 lemon extract

    graham cracker crumbs

    butter

    Steps

    Beat ricotta, 1 cup sugar and egg yolks until smooth. Mix in flour, lemon rind, lemon and vanilla extracts. In a seperate bowl beat egg whites and 1/3 cup sugar till it peaks. Beat the heavy cream seperately till it peaks. Fold in heavy cream and egg mixture in to ricotta mixture. Butter an 8 in springform pan sprinkle the graham cracker crumbs in the bottom Pour mixture into pan. DO NOT FILL TO TOP. Leave room for cake expansion while cooking. Preheat oven to 425 and bake 10 mins. Reduce oven to 325 and bake 1 hour. Turn the oven off and let cake cool in oven with the door closed. Make sure you follow these directions to the letter. ENJOY !!!

    Well, we are all packed and ready to head out tomorrow morning. We are looking forward to this very much needed vacation.

    I hope everyone is staying cozy and warm. We are still digging out from our snowstorm/ice storm and KY has called out the national guard to help them cope as thousands of residents are still without power.

    We have the Wii also and have so much fun with it. I love the fit and the bowling as Ken and I used to be avid league bowlers many moons ago.

    Well, better get going here doing the last of the laundry and heading out for my pedicure and last minute toiletries.

  12. Good Morning Everyone,

    It has been ages since I have been here. We have had so much going on in our lives I just haven't been myself. Some of you that have been emailing me know what has been happening. Things are settling down and we are resigning ourselves to it and figure it could always be worse. Anyway, I have been lurking from time to time so all that are going through hard times my prayers and thoughts have always been with you.

    Today we have about an inch of snow on the ground(big deal people here drive like idiots) but, tonight they say we are expecting significant snowfall so get ready Marylou. We have decided to sill take our cruise and will be leaving next Tuesday for Ft. Lauderdale for four days and then the cruise. We have never needed a cruise so much as we need now.

    Well, just wanted to pop in and say hi and that we haven't fallen off the face of the earth. lol

    I will try to get online more often.

  13. Good Morning all......

    Wow, I have been gone for awhile. So many new members. That's great !! A lot has been going on here. For me it has been computer problems and few minor health issues.

    We were not as lucky as Keith and Rita. We had sustained winds of 84 miles per hour and our electric was out for two days. We had 750,000 people without power in the Tri-State. All schools, restaurants, were closed and it was mass chaos. Gas stations were closed and those that were open ran out of gas. We still have about 300,000 people out. They had sent 800 crews to Texas to help with power and had to recall them.........When the power went out on Sunday my son was trapped for a little while at our loca amusement park on a ride. Do many people in our subdivision lost their roofs but we were really lucky and just had the many branches and leaves to clean up. Some called it a Cat 1 from Ike and others said no it wasn't but coming from New York and dealing with hurricanes I would go with the Cat 1.

    Who would ever think we would get this in the midwest...........Anyway that is what has been going on with us. I have so many posts to read I just might pick it up from here and welcome the new members and get to know them. My daughter just got her electric back last night from Sunday.

    Never been to the Bahamas so can't comment on that. We have had an aft balcony on our last two cruises. One on the Miracle and one on the Triumph..........They are awesome................

    You guys are scaring me as we are going to Jamaica in Feb. Should we stay on the ship. Ken was looking forward to Dunns River Falls.

    Well getting ready to go to work today but had to pop in and say Marylou...........I am the senior female here...........Turning 65 in January. I felt the same way when my daughter turned 40. Although my baby just turned 34 and Wow can't believe that........

    My heart goes out to Cait because if you remember I was diagnosed with an ulcer last October and it is no fun. Although the medicine did work and when I went back for my second endoscopy three months later it was healed.........It is tough for a girl so young to have so much stress when she should only be worrying about school and having fun..........

    Well I better get going. Have a great day all. We are having the most delicious weather lol

    Going to be a nice day here after all the storms we had here in the midwest...............Going to work this morning but just wanted to pop in and say hi to everyone.......Took the grandson to see Journey to the center of the earth in the new RealD.......It was absouletly amazing. Nothing like the 3d when we were kids..........Grandson couldn't beleive that we didn't have to pay. He thought that was real cool.....so he said, "Nan being you didn't pay for the movie can I play some arcade games"...........You gotta love em.

    Marylou.........I am so happy to hear that you are feeling better and your jury thingy is over for two years........BTW how was Dutch Wonderland............My kids loved that place when they were little......We always stayed at Willow Valley Resort which is all inclusive resort with meals and everything and we had a ball..............Sounds expensive but it was not but probably is now.

    The DD relocation is on hold as the job market here is really bad and she cannot move until she finds a job as her house has not sold yet......We are keeping our fingers crossed that is sells then she can come and take her time finding a job. Radiology techs are not a really open market as once people get the jobs they keep them. She said something the other day that was not meant maliciously but I had to chuckle. She said doesnt anybody ever die or retire there?.........so we are trying to keep it light.........

    At first my grandson was going to come out and start school without his parents here but I think he is not liking the idea as close as we are. So what would be the big deal if he starts there and then takes him out. People that get relocated do it all the time. I did. When we moved here to Ohio from Staten Island my son was in his senior year of high school. It was very traumatic for him as he was on varsity football and he missed his prom left his girlfriend(very devatating at 17) but he adjusted fine. He made many friend in the last six months of HS and went on to University of Cincinnati CCM and got his degree in fine arts. The friends that he made in that six months are still his best friends and he is 34. Wow I can't believe how I am going on and on but thanks for listening. It felt good to write it down. So everyone please keep your fingers crossed and your prayers going that they either sell the house or a job opportunity opensup and they can get here and get settled. One more thing.........when we were there for grandaughters graduation we had the truck and took a

    all her Christmas decorations home with us. Ken teases her and tells her if she isn't here by Christmas her house will be pretty bare. lol Now if anyone isn't asleep by now I will wish you all a great day.

    Harold's a pretty hip guy with his own car and a duck tail hairdo.

    When he goes to the front door, Peggy Sue's mother answers and

    invites him in: 'Peggy Sue's not ready yet, so why don't you have a seat?' she says.

    That's cool. Peggy Sue's mother asks Harold what they're planning to do.

    Harold replies politely that they will probably just go to the malt shop or to a drive in movie.

    Peggy Sue's mother responds, 'Why don't you kids go out and screw? I hear all the kids are doing it.'

    Naturally this comes as quite a surprise to Harold and he says 'Wh...aaat?'

    'Yeah,' says Peggy Sue's mother, 'We know Peggy Sue really likes to screw; why, she'd screw all night if we let her!'

    Harold's eyes light up and he smiles from ear to ear.

    Immediately, he has revised the plans for the evening. A few minutes later, Peggy Sue comes downstairs in her little Poodle skirt with her saddle shoes,

    and announces that she's ready to go.

    Almost breathless with anticipation, Harold escorts his date

    out the front door while Mom is saying, 'Have a good evening kids,' with a small wink for Harold.

    About 20 minutes later,a thoroughly disheveled Peggy Sue rushes back into the house,slams the door behind her and screams at her mother:

    'Dammit, Mom! The Twist! The TWIST! It's called The Twist!'

  19. Good Morning all........

    Wow seems everyone is having one problem or another. So sorry for them all...........I hope the ailing gets better, the toilets fixed and jury duty is over in a hurry...........

    I have been working so that is why I haven't been online lately. I just love the job........It is so much fun and takes up those boring hours during the day.........I am working with a bunch of teenagers and what a hoot they are.........They are already confiding in me(which I don't want) and calling me Momma Maria........lol One boy said yesterday wow you are so cool. I can talk to you easier than my Mom and I said that is because I am not your Mom.........cause I would kick your butt.........lol

    Anyway off today so getting caught up with laundry and the usual stuff and then tonight Ken my grandson and I are going to see Journey to the center of the earth in 3-D (free of course and the popcorn is a steal)
